  • 1 cup heavy cream
  • ½ cup whole milk
  • 4 large egg yolks
  • ¼ cup sugar (plus more for caramelizing)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Fresh herbs for garnish (like chives or parsley)

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a saucepan, combine heavy cream and milk. Heat gently, but do not boil.
  • In a bowl, whisk together egg yolks, sugar, and salt until pale. Gradually whisk in the warm cream mixture.
  • Fold in the crab meat and lemon juice.
  • Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
  • Bake for 35-40 minutes until set but slightly jiggly in the center.
  • Cool the ramekins and refrigerate for at least 2 hours.
  • Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
  • Garnish with fresh herbs and serve.
