- 1 pound fresh crab meat
- 1 cup heavy cream
- ½ cup whole milk
- 4 large egg yolks
- ¼ cup sugar (plus more for caramelizing)
- 1 tablespoon lemon juice
- 1 teaspoon salt
- Fresh herbs for garnish (like chives or parsley)
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, combine heavy cream and milk. Heat gently, but do not boil.
- In a bowl, whisk together egg yolks, sugar, and salt until pale. Gradually whisk in the warm cream mixture.
- Fold in the crab meat and lemon juice.
- Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 35-40 minutes until set but slightly jiggly in the center.
- Cool the ramekins and refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
- Garnish with fresh herbs and serve.
