  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

This classic creamy potato soup is the ultimate comfort food, packed with rich flavors and velvety texture. Inspired by generations of home-cooked tradition, this recipe transforms simple ingredients like russet potatoes, onions, and bacon into a soul-warming dish. Whether you’re seeking warmth on a cold day or a nostalgic taste of home, this potato soup delivers hearty satisfaction in every spoonful.

Ingredients

Scale
  • 3 pounds russet potatoes, peeled and cubed
  • ½ cup diced onions
  • ½ pound bacon, chopped
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2½ cups chicken broth
  • 2½ cups milk (2% recommended)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon smoked paprika (optional)
  • ¼ cup sour cream (for extra creaminess)
  • 2 tablespoons chopped fresh chives (for garnish)

Instructions

  • Cook the Bacon:

    • In a large Dutch oven or heavy-bottomed pot, cook the chopped bacon over medium heat until crispy.
    • Remove with a slotted spoon and set aside. Leave about 2 tablespoons of bacon grease in the pot.
  • Sauté the Onions:

    • Add the diced onions to the pot and sauté until soft and translucent (about 3-4 minutes).
  • Make the Roux:

    • Stir in the butter until melted.
    • Sprinkle in the flour, stirring constantly, and cook for 1-2 minutes to remove the raw flour taste.
  • Add Liquids & Potatoes:

    • Slowly pour in the chicken broth while stirring to prevent lumps.
    • Add the cubed potatoes and bring the mixture to a gentle simmer. Cover and cook for 15-20 minutes until the potatoes are fork-tender.
  • Blend for Creamy Texture (Optional):

    • For a smoother soup, use an immersion blender to blend some of the potatoes while leaving some chunks for texture.
  • Incorporate Dairy & Cheese:

    • Reduce the heat to low and slowly stir in the milk, shredded cheddar cheese, and sour cream. Stir until the cheese melts completely.
    • Season with salt, pepper, garlic powder, and smoked paprika.
  • Final Touch & Serve:

    • Stir in half of the crispy bacon and save the rest for garnish.
    • Ladle into bowls and top with additional bacon, shredded cheese, and fresh chives. Enjoy!

Notes

  • For a vegetarian version, replace bacon with butter and use vegetable broth.
  • For extra creaminess, use heavy cream instead of milk.
  • To thicken the soup more, mash some of the potatoes with a fork or add an extra tablespoon of flour.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days.
  • Freezing Tip: Freeze before adding dairy, then stir in milk when reheating.
