Ingredients
2 lbs chuck roast, cut into cubes
2 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 cup red wine (Pinot Noir or Merlot)
2 cups beef broth
1 tbsp tomato paste
1 tsp fresh thyme
1 bay leaf
Salt and pepper, to taste
1 cup mushrooms, sliced
2 tbsp flour (optional for thickening)”
Instructions
In a large skillet, heat olive oil over medium heat. Brown the beef cubes on all sides and transfer them to the slow cooker.”, “Add the onions, carrots, celery, and garlic to the skillet. Sauté for 3-4 minutes until softened
Add the tomato paste, wine, and beef broth to the skillet, scraping up any browned bits. Bring to a simmer and pour into the slow cooker.

Cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender.
In the last 30 minutes of cooking, add the mushrooms to the slow cooker.
If you prefer a thicker sauce, mix flour with a little water to create a slurry and stir it into the slow cooker during the final 30 minutes of cooking
Remove the bay leaf before serving. Serve with boiled potatoes, noodles, or crusty bread
